A quick, easy and refreshing homemade Salsa recipe perfect to serve with chips and will become a beautiful highlight to any gathering.
Summertime calls for bright colours and bright flavours. This "PINEAPPLE SALSA" checks all the boxes for summer cravings.
- It is one of the most amazing combinations of Sweet and Spicy.
- It is super refreshing with a hint of tang.
- Loads of other crunchy veggies complement the flavour and make it a delicious chunky salsa to serve with crisps and chips.
- And, hey, it tastes amazing on its own. So, you can also treat it as your own fruit-veg salad.
Now isn't the description above good enough for you all to get to the kitchen, cut that aromatic pineapple and fix yourself with this amazing salsa.
The ingredients to make this Salsa cannot be any simpler. All you need is fresh cut onions, capsicum (red, green yellow or whatever you prefer), tomato, green chilly and pineapple in fruits and vegetable. Fresh coriander, lemon juice, honey, olive oil, paprika, black pepper and salt for the added flavour.
Mix everything up and you are all set with a refreshing bowl of Pineapple Salsa which I found to be an amazing twist to the classic Tomato Salsa.
P.S. The chips in the picture are also homemade. I love making homemade, everything. And while my salsa was resting in refrigerator, I managed to bring together a dough to make my own whole-wheat paprika crackers which complemented my salsa wonderfully well. And i'll share the recipe for these crackers super soon.

What you need?
Freshly Chopped Pineapple - 2 cups
Freshly Chopped Onions - 1 medium (or more if you like)
Freshly Chopped Capsicums (Green, Red, Yellow) - 3/4 cup
Freshly Chopped Tomato - 2 medium
Finely Chopped Green Chilly - 1/2 tablespoon
Freshly Chopped Coriander - 1/4 cup
Fresh Lemon Juice - 2 tablespoons
Olive Oil - 1 1/2 tablespoons
Honey - 2 Tablespoons
Red Paprika - 1/2 teaspoon
Black Pepper Powder - 1/4 teaspoon
Salt - 1/2 teaspoon
Directions:
- In a large, deep bowl mix pineapple, onions, capsicums, tomatoes and green chilly. Give it one toss using spoon or spatula.
- Now add coriander, lemon juice, olive oil, honey, red paprika, pepper powder and salt to the mixing bowl. Toss everything together to combine.
- Your "Refreshing Pineapple Salsa" is ready.
Note:
- You can used boiled red beans as well as black pitted olives to add more complexity to this salsa. These both will complement it well and will make it more filling.
- If you plan on refrigerating the salsa to be served later, then add salt right before serving and not before that. Because salt tends to loosen the vegetables and fruits by extracting juices. Adding salt earlier will make your salsa lose its freshness and turgidity.
