Mango Chia Seed Pudding

We should all thank Lord that Mangoes are in season right now. That aroma of king of fruits is to die for.

Where there can be thousands of recipes that be created by using juciest Mangoes, I was more looking for something fresh, yet light and deliciously healthy. All I did was run to the pantry and check whether there still is Chia seeds left or not. I was in luck and all I could think of was to prepare Mango Chia Seeds Pudding for the breakfast next day.

It is simplest of recipes to bring together, all you need is few hours for chia seeds to be soaked up. And what a delight it was the next morning to have this wholesome pudding for breakfast. HEALTHY & REFRESHING!


 

What you need:

Chia Seeds - 4 1/2 tablespoons

Milk - 1 cup (240 ml) (use coconut/soy/almond milk, etc for dairy free options)

Sugar/ Maple syrup/ Honey - 2 tablespoons

Chopped mango - 1 cup

Mango Puree - 1/2 cup

Walnuts and Almond Flakes - 2 tablespoons


Direction:

- In 2 glass jars, bring together (equally divided) chia seeds, milk and sweetener together. Mix them well and let it refrigerate overnight to bloom properly.

- Next day (or after few hours) once seeds have bloomed and set in the jar properly, take it out of the refrigerator. Before serving, assemble mango cubes, mango puree, chopped walnuts and almond flakes.

- Assemble everything in layers or side by side, finishing with nuts on top and serve chilled.
