Frozen Yogurt Bars

These home-made Frozen Yogurt Bars are Gluten-free as well as Refined-Sugar free. Mixed with fruit compote, they make delicious, healthy & refreshing summer treats.



I ended up making these during the peak of summers, when sun was blazing and I was just living on "anything cold" edible things. From juices to salads, and to whole lot of ICE-CREAMS!!!!

And there I thought of making my own "healthy treat" that can always be my go-to summer treat. won't be too much for my tummy and also tastes quite yummy. And hence "FROZEN YOGURT BARS" came to rescue. They ended up being so sooo good. I tweaked them up for my choice of taste by adding some nuts and berries as well as swirled some berry jam to get that deliciousness in each bite.


I can totally vouch that they will always be in my freezer, for all the summers of my life!!


Yogurt:

Use, preferably, thick yogurt (like greek yogurt, store-bought thick yogurt or home-made hung curd) for a little creamy texture in the frozen bars. You don't want too many ice crystals or water pockets in these frozen treats.


Sugar, Honey or Both?

This choice is all yours. Choose whatever sweetener suits you best. If using sugar, prefer caster or powdered for it will dissolve quickly when mixing with the yogurt.

Use honey if you want these bars to be completely refined sugar free and add it according your taste.

Or use a combination of both. Completely up to you.


Add-ons:

Now there is no limit to what you could add to your frozen yogurt bars. Whatever fancies you, the taste, the texture, you can create whatever you have on hand or even purchase some gourmet items to tweak up these frozen bars.


My take:

I used a combination of honey and sugar (non-refined) to bring in my preferred sweetness to the bars but in limited quantity since I also used berry and orange preserve to make them a little more yummier!!

I added chopped dried cranberries, dried strawberries and dried pineapple with crushed almonds for some extra crunch!! And that is it... Froze it and there I had ultra-delicious HOME-MADE FROZEN YOGURT BARS.


 

What you need?

Thick Yogurt - 1 cup (250 grams)

Honey - 2 tablespoons

Fine Sugar (optional) - 1 tablespoon

Vanilla - 1/2 teaspoon

Salt - a pinch

Fruit preserves (of your choice) - 1 tablespoon

Chopped Dried berries - 2 tablespoons

Chopped nuts - 2 tablespoons


Directions:

- Add a teaspoon of yogurt to preserve and mix to bring in yogurt like consistency. Set aside.

- Pour yogurt in a mixing bowl and add sweetener (honey and sugar) to it and whisk until lump-free and sweetener has completely dissolved.

- Now add vanilla and salt to the yogurt bowl and mix for a minute.

- Now take a desired tin, bowl, etc in which you want to freeze yogurt mixture. Line it with foil for easy removal of frozen yogurt.

- Now Pour the yogurt in it. Top it with jam preserve by making swirls. Sprinkle dried berries and nuts on top.

- Give the tin a small tap and cover it with cling film or aluminium foil and freeze overnight. - Once completely frozen, take the tin out, carefully remove the frozen panel and cut it into bars using sharp knife.

- Either consume immediately or keep it in airtight container in the freezer to relish later.
