This one is especially for Mother's Day. These "Vanilla Hearts" are perfect treat and a way to show Mom how much they mean to us.
From my kitchen to mother's heart, you mean the World to me.

I owe my love for food, my existence and for the person that I am to my Mom. She has always supported me and extended her warmth and love in all of my times, no matter what.
Needless to say that they are no less than a super human being. Always up and ready before everyone else's, never saying No to our endless demands and they are the ones who have created magic in the kitchen.
One day dedicated to them to show them the appreciation is nothing to what they deserve.
Its the regular, day to day small deeds that can show her how important and loved she is.
Although no amount of love can come close to what she stores for all of us, but we can at-least whip us some magic in the kitchen and bake these "Cutest Vanilla Hearts" and gift her.
These are extremely easy to bake. All you need is to gather these "everyday ingredients", put on your apron and BAKE FOR YOUR MOM.
All the moms out there are fond of their liking of Hot Beverage and these Cookies will accompany it well. With tender texture and beautiful hint of Vanilla, they are perfect accompaniment to Chai or Coffee. Your Mom also may like to have a beautiful slice of fluffy cake to enjoy her day. For that you can also bake her another delicious treat "Eggless Bakery Style Honey Cake" because no amount of dessert is too many to celebrate her.
You can also pamper her by presenting her a fancy breakfast with my "Eggless Crepes" or "Eggless Chocolate Pancakes" or a healthy refreshing "Mango Chia Seed Pudding".
Preparing these is the least of what we can do in comparison to what she does for all of us, but whipping something up for her will surely bring that bright smile on her her face, which is worth everything.
Important: With these "Vanilla Hearts", it becomes important to roll out the dough before chilling it, so that it is easy to cut the desired shapes without damaging the dough. Once the dough has formed, use baking/parchment papers, place dough between them and roll to achieve desired thickness (about 1/2 cm) and then chill for a minimum of 1 hour in the fridge. This saves the time of rolling it after the dough is chilled, which becomes a little messy work to handle. All you have to do is take the chilled, rolled dough out, cut the shapes and they are ready to be baked.
Make sure that dough is not left outside at the room temperature for a long time before baking because that will distort the shape of the cookies. They might become flat and lose their shape.
Your oven should already be pre-heated, ready to bake. All you have to do is, take the dough out, cut the cookies, place them on baking tray and bake right away.
The leftover dough can be rolled out again for more cookies. But let the new cut outs to chill in fridge or freezer before baking (very-very important to maintain the shape of the cookies).
As you can see in the picture above, the cookies have come out perfectly, without flattening and have retained it's perfect shape.
The trick is chilling the cut out cookies before baking.
Also, why bake just one treat for her?
Why not give her a bundle of joy, by baking few other treats that she'd love. You can gather your family together to celebrate her and have your own little party. What you need?
Soft Butter - 1/2 cup (115 grams)
Castor Sugar - a little less than 1/2 cup (80 grams)
Vanilla - 1 teaspoon
Milk - 3 tablespoons
All purpose Flour - 1 3/4 cups (220 grams)
Salt - a pinch
Baking Powder - 1 teaspoon
Directions:
- In a bowl, sieve flour, salt and baking powder and set aside.
- Cream Butter and Sugar till light and fluffy using whisk. Beat in vanilla and milk. Whisk again fro another 2 minutes.
- Add the flour mix to it. Using spatula, fold gently and combine well to form a dough. DO NOT OVER-MIX.
- Now roll the dough to get the desired thickness, place between parchment papers and chill in the refrigerator for an hour.
- Take the dough out after an hour, cut with the desired cookie cutters, place on baking tray (lined with baking paper) and keep in freezer for 15 minutes.
- In the meantime, preheat oven to 170*c.
- Now bake in the pre-heated oven at 170*C for 10-12 minutes. (Rotate the tray in the middle of baking for all the cookies to bake evenly). DO NOT OVER-BAKE.
- Now let the cookies cool down completely before decorating, eating or serving.
Note:
- Rolling out dough before chilling is important for easy cutting later.
- Second time chilling in freezer is important so that cookies go completely cold in the oven and retain their perfect shape after complete bake.
- Let the cookies cool down completely before dipping them in Chocolate. Once dipped in chocolate, place them on baking tray lined with parchment paper and place in freezer for 5 minutes for chocolate to set completely.
