Eggless Healthy Banana Pancakes

I have always been a "Breakfast" and "Dessert" person. I can even eat breakfast all day long, be it for lunch or for dinner.

So when I stumbled upon bananas, which were aging weirdly fast, I thought why not make some PANCAKES with bananas in it. The bananas will be used and I will get a super delicious and healthy breakfast out of it.

These Pancakes have banana written all over it because it not only contains banana puree in the batter, but I topped it with more fresh banana slices.

Again, you do not have to hassle around much to bring together this recipe as it requires just a few basic pantry staples and you are all set.

Ingredients


DID YOU KNOW: Banana is the second most important fruit crop in India next to Mangoes. A wide variety of health benefits are associated with the curvy yellow fruit. Bananas are high in potassium and pectin, a form of fiber. They can also be a good way to get magnesium and vitamins C and B6.


This "Banana Pancakes" recipe is just one blender recipe, completely fool-proof and no drama at all.


The making of Pancake Batter!

Waking up to the smell of Pancakes is a dream, a delicious and delightful dream, as I have been told because I was busy in the kitchen, whipping up these. :) :)


Why did I use Blender?

I found it extremely easy to blend the ingredients of this pancake in a blender.

Firstly, it helps in blending the bananas without any lumps and you get a luscious texture.

Secondly, there is no fuss in grabbing different mixing tools.

Lastly, it is a super clean method and all the ingredients combine beautifully.


Trick to get Fluffy Pancakes:

The trick to achieve fluffy pancakes is to follow the recipe and make sure that the batter is not too thin otherwise it will spread on the pan and you will lose that fluff.

Once you pour a small about of batter on the pan, wait for small bubbles to appear on the surface of the pancakes, then slowly flip the pancakes and cook the other side for about a minute. You will have just lovely, golden-brown pancakes.

So next time, when you happen to have aging bananas lying around in the house or when you deliberately plan to have delicious breakfast, do give this recipe a go because IT IS THAT DELICIOUS.

Stack up those beautiful pancakes, pour maple syrup or honey on top of it. Put more freshly cut bananas, more chocolate chips because why not and sprinkle chia seeds on top.

What you need?

Ripened Bananas - 1 large (cut in pieces)

Castor Sugar / Honey - 2 tablespoons

Vanilla - 1 teaspoon

All-purpose Flour/ Whole-wheat flour - 1 cup

Oil / Melted Butter - 2 teaspoons

Milk - 1/2 - 3/4 cup (for desired consistency)

Baking Powder - 1 1/2 teaspoons

Salt - 1/2 teaspoon

Cinnamon (optional) - a pinch

Chocolate-chips (optional) - 2 tablespoons


GLUTEN-FREE OPTION

Ripened Bananas - 1 large (cut in pieces)

Castor Sugar / Honey - 2 tablespoons

Vanilla - 1 teaspoon

Oats Flour / gluten-free flour - 1 cup

Oil / Melted Butter - 2 teaspoons

Milk - 1/2 - 3/4 cup (for desired consistency)

Baking Powder - 1 1/2 teaspoons

Salt - 1/2 teaspoon

Cinnamon (optional) - a pinch

Chocolate-chips (optional) - 2 tablespoons


VEGAN OPTION

Ripened Bananas - 1 large (cut in pieces)

Castor Sugar / Honey - 2 tablespoons

Vanilla - 1 teaspoon

All-purpose Flour/ Whole-wheat flour - 1 cup

Vegetable Oil - 2 teaspoons

Soy Milk / Almond Milk / Coconut Milk - 1/2 - 3/4 cup (for desired consistency)

Baking Powder - 1 1/2 teaspoons

Salt - 1/2 teaspoon

Cinnamon (optional) - a pinch

Chocolate-chips (optional) - 2 tablespoons


Directions:

- Place cut pieces of ripened banana, vanilla and sweetener (if using) into the blender and pulse a few times to make a smooth paste.

- Now add choice of milk and fat (oil or butter) and pulse again to combine everything. - At last, add the dry ingredients (choice of flour, baking powder and salt) and blend again to make a smooth and lump-free batter. DO NOT OVERMIX.

- Add chocolate chips and mix with spoon.

- Place a flat (non-stick) pan on the medium low heat and rub oil or butter on it and let it heat up a little bit.

- Use deep ladle to pour pancake batter on the pan and spread a little to achieve desired size. Wait for 2-3 minutes and you will see small bubbles appearing on the surface and edges seem lifted. This is the clue to flip the pancake. Now slowly using spatula, lift and flip the pancake and cook for another minute.

- Take it out on the plate and repeat the process for the leftover batter.

- Once all the pancakes are stacked on the plate, pour honey or maple syrup on top. Add more freshly cut bananas, drizzle chia seeds and sprinkle some more chocolate chips to complete the DREAMY plate of fluffy Banana pancakes.


Healthy Eggless Banana Pancakes with Honey, Fresh Bananas, Chocolate Chips and Chia Seeds..

NOTE:

- Size of Bananas differ, therefore add liquid (milk) to the batter one tablespoon at a time to achieve the desired consistency without ruining the batter.

- Do not cook pancakes for long time as they tend to harden and may give out burnt aroma.

- Do not over-mix the batter while blending dry ingredients and wet ingredients together. Mix just until combined and this will lead to fluffy and tender pancakes.

- You can use nuts, butter, peanut butter, chocolate sauce, whipped cream, cream cheese, cinnamon sugar, etc to create pancakes exactly of your liking.
