These melt-in-mouth Cheddar Cheese and Potato Patties are mellow, soft inside with crunchy exterior and burst with Cheese.
No doubt that I am a dessert person and I love to create and bake majorly all things sweet but I also love savoury snacks and food. From crackers to salty nibbles, from indulgent full course savoury meal to street food.
Potatoes tend to be such a versatile root vegetable which helps in creating innumerable dishes and snacks. And for that major reason, I always have few boiled potatoes in my refrigerator for a quick snack fix.

The Portuguese introduced potatoes, which they called 'Batata', to India in the early seventeenth century when they cultivated it along the western coast. British traders introduced potatoes to Bengal as a root crop, 'Alu'. By the end of the 18th century, it was cultivated across northern hill areas of India
Talking about Potatoes, you just cannot ignore them here in India. Each and every household will have that basket in their kitchen filled with fresh Potatoes. They are super versatile and humble. From fries to wedges in startes, from roasted to curry based for main course, baked or fried, they are used in so many different ways and loved majorly by all.
Since I already quenched my sweet tooth with home- baked goodies, I was looking for something Cheesy and Potato just seemed to accompany it well. While going through my refrigerator, I found a few boiled potatoes (I always have a few) and Cheddar Cheese. And that gave birth to these delightful Cheesy Potato Patties.
You can eat them with Burger Buns, with Sandwich bread, on their own with your choice of dip and the choices are endless.
As you can see, these require just handful of ingredients and you can make these patties in no time.
Why Pan- Fried?
I, personally, am not a big fan of Fried food. Very rarely and only on a few occasions I indulge in a bite or two of fried food. I have developed a habit of cooking and baking which requires no deep frying, rather I use the methods of Pan- frying, Stir- Frying, Baking, etc to create a little less unhealthy snacks and meals.
Hence I chose to pan fry these patties instead of deep frying. Less soaking of oil, retains soft and mellow interiors with good crusty and crunchy exterior.
For Crunchy Exterior
I used fine 'Semolina' to coat the patties which when pan-fried will bring that extra crunch. You can use "Bread Crumbs" instead of Semolina. You can also use "Very Fine roasted Vermicelli" for coating.
And if you just like the patty without any coating, go for it. Pan fry them a little longer and the skin of the patty with have a beautiful golden crunchy exterior.
All you have to do is combine all the ingredients together, form a patty, get your choice of crunchy exterior, pan fry and YOU ARE DONE!

What you need?
Boiled Potatoes (peeled and grated) - 4 medium
Grated Cheddar Cheese - 1/2 cup
Finely Chopped Onion - 1 medium
Finely Chopped Coriander - 2 tablespoons
Finely Chopped Green Chilli - 1/4 teaspoon
Finely Chopped Garlic - 1-2 teaspoons (4-5 cloves)
Grated Ginger - 1 teaspoon
Red Chilli Powder - 1/2 teaspoon
Black Pepper - 1/4 teaspoon
Salt - 1 teaspoon
Semolina/ Bread crumbs - 1/2 cup (for coating patties)
Oil - for Pan frying
Direction:
- Place all the ingredients in a big bowl and combine them using wooden spoon. to make a dough.
- Shape them in form of a round patty using palm and press them a little in the middle.
- Coat with semolina or bread crumbs evenly on the surface of the patty.
- Place a pan on the stove at medium flame. Pour 2 tablespoons of oil on it.
- Carefully place prepared patties on the pan and keep flame at medium-low.
- Keep checking the bottom side of the patty. Turn them once golden and cook the other side.
- The patties are ready to be served and eaten.
Note:
- Make sure that the potato mix is well seasoned.
- Addition of cheese is important for the stretchy and super soft texture of the patty.
- Add more or less seasonings of your choice.
- If eating on its own, these go great with Onion dip, sour cream and also ketchup.
- You can also use them to make potato burgers.
